Spinach and Tomato Omelet
1 Red – 2 Eggs
1 Green – Spinach & Tomato
1 Yellow – Whole Wheat Toast (2 in picture for “pretty” factor) 🙂
1 tsp – EVOO
FREE – Garlic
Salt (for taste)
1.) Sautee spinach and garlic in EVOO over medium heat.
2.) Crack and whisk eggs. Pour eggs in skillet with spinach. Cook evenly and flipping as needed.
3.) Add roasted tomatoes to top (see recipe under 21 Day Fix Recipe tab) for additional YUMMY greens!
Serve with toast and ENJOY!
