A great Paleo-friendly chicken dish – Bacon Wrapped Coconut Chicken Kabobs. And who doesn’t just love food eaten on kabobs?!
2 pounds Chicken Tenders
8 individual Bacon
½ cups Coconut, Shredded
2 tablespoons Coconut Flour
½ teaspoons Salt
½ teaspoons Black Pepper
½ teaspoons Garlic Powder
½ teaspoons Paprika
2 tablespoons Parsley, Dried
Cut each chicken tender and each piece of bacon into 3 pieces.
In a bowl, combine shredded coconut, coconut flour, salt, pepper, garlic powder, paprika, and parsley.
Place chicken pieces in coconut coating and press to adhere.
Wrap each chicken piece with a bacon piece.
Thread about 6 chicken pieces on a skewer.
Heat skillet to medium-high heat, add coconut oil and allow to heat.
Place skewers in skillet (or a flat griddle, like I have shown in the pic) and cook, turning every 3 minutes, or until completely cooked. These would also be GREAT made on a grill!
