Meal prep doesn’t need to be a huge hassle with spending tons of time in the kitchen. Each weekend I like to make a big “batch” of something to split up into portions for me and my husband for our lunches throughout the week. Lots of you requested this recipe so here it is!
Salad ingredients – mix all in a bowl:
8 oz. pasta cooked
1 15 oz. can chickpeas
1.5 cups grape tomatoes, sliced in half
1 cup broccoli, cut up into bite size pieces
1/2 cup shredded carrots
1/2 cup sliced red onion
1/4 cup parsley
Dressing ingredients – mix all in a small bowl:
1/4 cup olive oil
1/4 cup red wine vinegar
1 garlic clove, chopped
1 tsp oregano
salt and pepper, to taste
Mix dressing into salad, toss, and enjoy!
